Baking Is Life

Whenever my life gets hectic or too much to handle, I find a hobby. Sometimes a good book begs to be read, and other times a canvas beckons me to fill it with color. Baking has recently become my go-to stress reliever. It allows me to work with my hands, make something from scratch, and spread the love. Here is my coveted Banana Walnut Cupcake Recipe.

Ingredients:

  • 1/4 cup of butter, softened
  • 3/4 cup of sugar
  • 2 eggs
  • 1/2 cup of mashed ripe banana
  • 1 teaspoon of vanilla extract
  • 1 cup of all-purpose flour
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/4 cup of sour cream
  • 4 ounces of cream cheese, softened
  • 1/2 teaspoon of vanilla extract
  • 1-3/4 cups of confectioners’ sugar
  • 3 tablespoons of chopped walnuts
Making the batter:
  1. In a large bowl, cream butter and sugar until it is light and fluffy. Add eggs, one at a time, beating well after every addition. Beat in banana and vanilla. In a separate bowl, combine the flour, baking soda and salt; slowly add it to the creamed mixture and mix in fully. switch between adding the dry mix and sour cream.
  2. Fill paper-lined cupcake holders half full and back at 350 degrees for 18-22 minutes. Let them cool completely before frosting.
  3. In a small bowl, beat the softened cream cheese and vanilla until smooth. Slowly beat in the sugar, mixing fully after every addition. Frost the cupcakes and sprinkle walnuts on top.

This recipe is easy to follow takes under an hour to complete, which is usually just enough time to leave me feeling relaxed and light hearted. The holiday season is always a stressful time, so why not try something new and make something good? What are some of your favorite recipes?
